Oscar’s Favorite Carrot Cake Cupcakes with Brown Sugar Frosting

Here’s the recipe, I hope you enjoy! (These are one of Oscar’s favorite desserts I make)


CAKE

1 c Flour

1 tsp Baking Soda

1/2 tsp Baking Powder

1 1/2 tsp Cinnamon

1/4 tsp Salt

1/3 c Vegetable Oil

1/4 c Apple Sauce

1/3 c Brown Sugar

1/2 c Sugar

2 Eggs

1 tsp Vanilla

1 1/2 c Finely Grated Carrots


FROSTING

8 oz Block of Cream Cheese (Softened)

4 tbsp Butter (Softened)

3/4 c Brown Sugar

2 c Powdered Sugar

1 tsp Vanilla


  • Preheat oven to 350°. Line cupcake tin with 12 liners and set aside.

  • In a medium bowl, combine 1 c Flour, 1 tsp Baking Soda, 1/2 tsp Baking Powder, 1 1/2 tsp Cinnamon, and 1/4 tsp Salt. Set aside.

  • In a large bowl, whisk together 1/3 c Vegetable Oil, 1/4 c Apple Sauce, 1/3 c Brown Sugar, 1/2 c Sugar, 2 Eggs, and 1 tsp Vanilla until thoroughly combined.

  • Add in dry ingredients from the second step, mix until just incorporated.

  • Shred carrots finely until you have 1 1/2 c Finely Grated Carrots to add into the mixture. Stir in until combined.

  • Divide batter into 12 cupcake liners that you prepped earlier.

  • Bake for 18-20 minutes, allow to cool before frosting or the frosting will melt.

  • While the cupcakes are baking, allow the 8 oz Cream Cheese and 4 tbsp Butter to come to room temperature.

  • Beat 8 oz Cream Cheese, 4 tbsp Butter, and 3/4 c Brown Sugar in a stand mixer with the paddle attachment. Beat on medium high for 2 minutes, then 1 minute on high.

  • Add in 2 c Powdered Sugar and 1 tsp Vanilla. Mix on low speed until Powdered Sugar is incorporated. Beat on medium until creamy.

  • Frost on top of cupcakes.
